Change dropdown toggle text to focused/clicked item? (Like form select field)

I’m trying to use a dropdown as the selector for filter options on a gallery page and am wondering if it is possible for the dropdown to act like the “select” field in a form - once you click on a link within the dropdown, the selected option name is then displayed on the toggle block.

Or maybe this isn’t possible and someone has a better idea on how to achieve this?
