The blog template I purchased automatically only allows 8 blog post thumbnails to be displayed on the blog page.
How do I increase that number and maybe add an additional page for more blog posts?
Select the dynamic list, then open the settings tab and update the Limit items option under Sort Order

As to creating an additional page for more posts, create a new page called “Blog Archive” or similar, throw a dynamic list in there and don’t limit items (so it displays all posts). Then just add a link to your /blog page that points to your new “archive” page.
