I’ve read through everything I can find on this forum but I’m still looking for answers to certain questions regarding this topic.
If I export my site via Udesly, I can still use all the usual Shopify app integrations in my store, right? Aftership, currency converters, language translators, and things like that, for example. Alternatively, if I were to use Webflow only, can I use these apps (or similar apps)?
The other option is the Shopify buy button integration. However, I’ve read that integrating the Shopify buy button onto WF doesn’t allow you to track analytics, is this still the case?

Correct, your site will live in the Shopify ecosystem so you’ll be able to use Shopify Apps—however keep in mind that you may need to do some custom installation as you won’t be using a standardized theme.

If you keep your site hosted with Webflow you won’t be able to use any Shopify-specific apps, however lots of Shopify developers create variations that work on other platforms. If Webflow isn’t explicitly listed, you may still be able to integrate the functionality with the help of custom code and/or embed elements in the Designer. Webflow keeps a list of supported integrations here as well that may be useful.

I’d take a peek at this thread on the Shopify community forum for some more information. That said, it doesn’t look like it’s possible to get a complete picture due to limitations with cross-domain tracking and cookies not being available within iFrames.
