Where’s the “unlink symbol” functionality gone?
I can’t seem to find it anywhere.

found it, right click on the symbol

Alternatively, the shortcut you need to remember is SHIT+CMD+A. It will create a new symbol with what’s selected, or unlink a selected symbol.
You can see all the shortcuts by typing ?in the designer.
